For must of us, "Crush 2019” is beginning to wind down;
and in a few weeks,
“Vintage 2019” is going to be more of a “memory in a bottle!"

The Pinot Noirs and Chardonnays have been picked and our attention has turned to the reds like
Syrah, Merlot, Zinfandel and Cabernet Sauvignon

For those who observed the lit-up vineyards at night,
will notice that most are now dark

This is due to the switch from
night picking to day picking,
as we harvest the remaining red varieties

An interesting fact:
we count Pinot Noir as a white grape even though it is red.

 



There is one main reason we pick the whites at night.

This way they get processed early in the morning at the winery while they are cold.

This helps keep unwanted flavors from entering the wine due to early fermentation during transport.

In the old days, the winery would have to chill
the white fruit down.


 


Reds on the other hand,
are not as susceptible to the
warmer day time temperatures, 
and being too cold,
could slow down the fermentation process.

We normally pick red varieties from sunrise to noon.



 

 

Our Grape harvest should end around
November 1
st... Just in time for our OLIVE harvest!

 

 

Harvesting olives is very labor intensive and a crew of 25 employees can harvest around
6 to 7 tons in an 8-hour day.

The process is
simple, we net the orchard and use rakes to shake the olives into the nets. 

We then gather them and put them into picking lugs, for transfer to the olive press.

Unlike wine, the
olive oil will be ready in approximately 6 hours after being picked.

 





A few fun facts about olives:

One ton of olives produces approximately
30 gallons of olive oil.

A five-gallon bucket full of olives is around 30 pounds. This would make about 64 ounces or two quarts of oil.

Olive trees are alternate bearing, they only crop heavy every other year.

Due to this fact; we only
prune every other tree, (in the orchard) every other year, to end up with the same amount of oil each year. out of an orchard.

Olive oil used to be used in lanterns for light and heat.
