Sonoma is a world-class

wine growing region.

Sonoma wines rank with the best of the best

and for years,
have been celebrated around the world.

The big question is why?

Sonoma’s climate, soil, topography
and knowledge
of what to do with Mother Nature’s gift,
all enhance the wine making quality.

In simple terms,
we have what it takes to grow a perfect grape.

And, in the end... it really is all about the grape!

There are three parts of a grape berry:

the skin, flesh and seed.

They each have a key role
in the final product... the wine.

The Skin: The skin is covered by a waxy layer
called a cuticle.

Due to its structure the skins of a grape berry
are unable to expel heat or water efficiently.

This can make the grape very susceptible to damage from many climate conditions or farming techniques,
i.e. overwatering and extreme weather,
being notable examples.

Grape skins contain high-levels
of phenolic compounds,
which are responsible for aroma, flavor and color.

The skin cells also contain many types of tannins, which influence mouthfeel and flavor,
such as astringency and bitterness.

The Flesh: The flesh of a grape berry,
has larger and rounder cells than the skin
and contain vacuoles,
where many sugars are accumulated
during grape berry ripening.

During the transport of sucrose
from the vine’s canopy,
it is broken down into
glucose and fructose sugars.

Sugars are converted
to alcohol in the wine making process.

The vacuoles also contain
phenolic compounds and acids.
There are many types of acid present,
but the two primary acids are Tartaric and Malic.

The acids influence color, balance
and the taste of the wine.

Most wines have a pH of 2.9 to 3.9,
but are evaluated in relation to
how well the acidity balances out
the sweetness and bitter components.

Grape Seed: The grape seed plays a key role
during the maturation of the grape
and serves to nourish
the embryo during the early growth stages.

A healthy vine can help support this role,
and as in building a house,
it is crucial to begin with a great foundation.

The ratio of flesh and skins (berry size)
is crucial in producing a well-balanced wine
that can stand on its own in the bottle,
without much enhancement.

Growing world class wine depends upon:

A perfect balance
of the right temperatures at the right time.

The perfect soil to allow
key components
of the grape to thrive.
And just enough heat,
to allow the
fruit to ripen at a perfect rate.

In Sonoma, we are blessed to have all of that;

which in the end produces, the perfect grape!
