  “Vintage 2020” is in full swing!

For most of us, pruning of the grapevines,
is almost completed.

We started in early January, and most of us will be finished by the end of February.

Pruning is one of the most important tasks in the vineyard.

While we are pruning, we look for issues in the vineyard,
and create our farming plan,
that we use throughout the growing season.

 

 

  What problematic issues are we


looking for this time of year,

 while pruning
in the vineyard?

 

1. Scion-rooting: Most grapevines in Sonoma are two plants grafted together to make one.

Make sure that the scion, the variety part of the plant above the
bud-union, is not growing roots.


 Phylloxera, is caused by a small insect, that feeds on the roots of the vine, and will gradually cut off all nutrients to the vine. 

This could be fatal to the plant, due to most
scion wood, is not phylloxera resistant. 


 



2. Girdling: Most grapevines get tied to
the trellis’s fruiting wire.

If the ties or tape are too tight, d
ue to growth from the previous year, it can girdle the plant.

Some ties, can last up to three years and are capable of not stretching as the cordon grows.



 



3. Short shoots:  When pruning, this is a great time to look at last year’s growth,
as well as the
diameter of the shoots.

This is also a great time to determine if they
are sick or
unhealthy.

When you come across a
short shoot, sometimes it is best to leave only one bud instead of two.


 


4. Mildew:  The wood can show stains of mildew activity from the previous year.

Normally, it is seen in young vineyards where a fungicide program was not used.

If seen, it is a sign to apply a
dormant fungicide,
to eradicate. There are organic products available,
for this issue

 
 


5. Rabbit and Deer fencing: Some vineyards do not need rabbit and deer fencing, but for those that do,
this is a good time to look and see if the fence is in need of repair, for the upcoming
“Bud-Break”.

Rabbit damage on young vines, or deer damage on tender young shoots, early in the growing season,
can cause serious issues for the vineyard.




 

 
There are more things to look for, however, the key to remember is; when you are in the vineyard,
be vigilant.

Look around and find the issues,
before they become major problems.
 
 
    Prevention is the best medicine!

Instructions
  1. Marinate tri tip in marinade mixed above for 4 hours. Dry, salt and pepper and barbeque until desired.
  2. Cook reserved marinade until reduced by half and serve with sliced Tri tip or sprinkle on salad.

Chocolate Chèvre Tortas with Winter Jams & Chocolate
As a group we will make a fresh chèvre and then layer with chocolate and jams to make a Torta in a jar.

Friday, 3-6-2020                  
Creme Fraiche & Vinegar Making Class 
(with over 75 year old Mother Vinegar, from Ig Vella)
As a group, we will make a fresh Creme Fraiche, then a selection of Vinaigrettes & Sauces with Creme Fraiche

Saturday, 3-14-2020
Vegan Cheese Class, with Almond Feta, Soy FarmersCheese and Hemp Ricotta
As a group, we will make a selection of Vegan Cheeses, with choice vegan products.

Buttermilk, Sour Cream & Kefir & Kefir Soda with Spring fruits
As a group, we will make a fresh Buttermilk, Sour Cream and Kefir. Then we will make a Kefir Spritzer with a variety of fresh Spring Fruits.

Saturday,  5-16-2020                                   
Crème de Ricotta & Poached Salmon
As a group, we will make Crème de Ricotta, then poach fresh salmon in the whey from the Ricotta

Saturday, 6-20-2020                                           
Chèvre, Crème Fraiche & Fromage Blanc with local honey tasting.
As a group, we will make Chèvre, Crème Fraiche & Fromage Blanc and taste a variety of local honeys.

Saturday, 9-19-2020                    
Feta Three Ways with fresh pressed harvest grape juice
As a group, we will make Feta from Cow's Milk, Goat's Milk and Sheep's Milk, plus add flavors including Peppercorns, Oregano and Olives.  We will also press grapes from a local vineyard, for fresh juice.

Saturday, 10-17-2020                          
Pumpkins stuffed with Maple Crème de Ricotta
As a group, we will make Crème de Ricotta, then season with fresh herbs and stuff, pumpkins and squash
 
Saturday, 11-21-2020                 

Sage Cheese Curds
As a group, we will make a fresh cheese curd and season with fresh and dried sage.
 
Saturday, 12-12-2020

Cheese, Chocolate Truffles, three ways!
 As a group, we will make Chèvre, Fromage Blanc and a blend of Chèvre/Crème.
Fromage Blanc and coate with dark, milk and white chocolate, along with sprinkles and spices. Each guest will make truffles to enjoy and or take home.
