Move Your Clocks Forward
This Sunday, March 8th. 



Daylight saving time begins March 8th at 2 a.m. 

We will "spring forward" and lose an hour of sleep.

This is the launch, to getting ready for Spring;
which is eighteen days away. 


                  Spring begins on March 20th.


A few weeks after last year's harvest,

in September and October,

the vines began entering into a state of dormancy.



The vines upward growth, nutrient flow,
turns downward, towards their roots to store its nutrients for the next year.
The hard frost of the winter, in November,
completed the process into total dormancy;
causing the plant to lose all last year’s foliage.

This is a natural process
and is part of the life cycle of a vine.



Getting Closer to Bud Break!

Since then, our vines have been waiting
for the
right soil temperature, 
to begin their annual growth cycle.

That time, should be arriving in the next week or so,
for some of
the earlier varieties,
Chardonnay and Pinot Noir.


Those vines are starting to show signs of life,
after a long winter’s rest..
bud break!

Grapevines are unique in that,
shortly after bud break,
   and within a brief period;  
you will see the leaves appear
and even small clusters of grapes!
This is the first look at this year’s crop.

Even though the clusters are small,
they can tell us a lot
    about this year’s vintage...

“Vintage 2020”



Due to the clusters being exposed
on the top of the shoot,
weather can become an issue
and affect the tender growth.


Hail, hard rains, and frost are the usual suspects.

The next month will be very crucial
for the beginning of our long growing season.

As the shoots grow throughout the springtime,          
the fruit clusters will stay in that position
and the shoots,
 will continue to grow upwards.

This will shelter and protect the clusters from the late spring rains and sizzling summer temperatures.

Farming has always been a risky business,
but hopefully, Spring will be kind to us...
with no surprises!

As a group, we will make a fresh Buttermilk, Sour Cream and Kefir. Then we will make a Kefir Spritzer with a variety of fresh Spring Fruits.

Crème de Ricotta & Poached Salmon
As a group, we will make Crème de Ricotta, then poach fresh salmon in the whey from the Ricotta

Saturday, 6-20-2020                                           
Chèvre, Crème Fraiche & Fromage Blanc with local honey tasting.
As a group, we will make Chèvre, Crème Fraiche & Fromage Blanc and taste a variety of local honeys.

Feta Three Ways with fresh pressed harvest grape juice
As a group, we will make Feta from Cow's Milk, Goat's Milk and Sheep's Milk, plus add flavors including Peppercorns, Oregano and Olives.  We will also press grapes from a local vineyard, for fresh juice.

Saturday, 10-17-2020                          
Pumpkins stuffed with Maple Crème de Ricotta
As a group, we will make Crème de Ricotta, then season with fresh herbs and stuff, pumpkins and squash
Saturday, 11-21-2020                 

Sage Cheese Curds
As a group, we will make a fresh cheese curd and season with fresh and dried sage.
Saturday, 12-12-2020

Cheese, Chocolate Truffles, three ways!
 As a group, we will make Chèvre, Fromage Blanc and a blend of Chèvre/Crème.
Fromage Blanc and coate with dark, milk and white chocolate, along with sprinkles and spices. Each guest will make truffles to enjoy and or take home.
