Happy Holidays from all of us at
CVM / Cook's Mercantile

~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~
We want to take a moment, to thank all our clients and customers for making this past year so special.
“Vintage 2019” was another great Vintage Year in  Sonoma Wine Country!
Once again, we experienced great tonnage along with exceptional quality.
The New Year and “Vintage 2020”
are right around the corner.
Our crews will receive some well-deserved rest
through this
holiday week.
At the start of the new year,
we will begin pruning the
grapevines.
Pruning the vines, is one of the
most important tasks of the year.
Cordon, Cane and Head Pruning are the most common pruning techniques; however, there are different variations to all of them
to help create a
balanced vine.
Some vineyards with a lot of vigor may have  Kicker Canes to slow growth in the vine.
 A kicker cane (aka a sacrificial cane or a vigour diversion cane) can be very helpful in controlling overly enthusiastic vines.
This method involves retaining supplemental, disposable canes at pruning time,
at the crown of a Head Trained vine,
or at the apical end of a Cordon Trained vine;
to
act as another fruiting arm.
In vineyards with
little vigor we may only leave one bud on a spur instead of the normal two buds.
Due to spacing, variety, rootstock, soil types
and many other things, every vineyard is pruned differently; as one size does not fit all.
Pruning can be very challenging.
A great pruning job can help make other tasks,
later in the year, much easier!
What do we do with the pruning’s,
after we prune?
For anyone who has ever walked through a vineyard,
after it has been pruned,
you realize how much of the vines get cut off the plant...
                          … It is actually a lot!
In the past, the custom was to burn the pruning’s.
Now, due to alternate ecofriendly
methods,
this is no longer the case.
Currently, after pruning,
most vineyards get
mowed with a Flail Chopper;
which turns the pruning's into a fine dust.
In some
vineyards, we completely remove the cuttings, and they are hauled to a compost site or shredded, to be incorporated back into the vineyard, at a later date.
So, in the next few weeks, you will begin to see a lot of action in the vineyards, as our pruning season begins.
Vintage 2020 has officially begun!
Quote of the Week:
"What good is the warmth of summer,
without the cold of winter to give it sweetness."
“Olive Sonoma”
Arbequina Olive Oil,
just so happens to be David Cook’s and my favorite.
AND
Won a  Gold AWARD  at the
2019 World Olive Oil Competition
“Olive Sonoma” Arbequina, is a well-balanced olive oil,
with tasting sensations of Almond, Celery, Chamomile and Black Pepper
~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~

Arbequina goes well drizzled over meats to bring out their intense flavors.
It’s also great in pesto (I use it in mine) and salad dressings.

Interesting fact:  A customer recommends using Arbequina for baking.  She told me that she substitutes it for butter and used it in her Brownie Recipe!
