And so it begins... All over again!

January, is the beginning of a long season,
for us in the wine country.

Each day, the daylight hours get longer, as we begin
our journey to bud break, in late March.

Some would describe the next few months as,
the calm before the storm; which is ironic, as we will need a few good winter storms, to give us enough water for another successful wine-grape, growing year.


The December rains, helped to begin filling our lakes and aquifers, with a much-needed asset... water.

 


How much precipitation do we need every year, for a successful vintage?

 

 

 Our wine country average rainfall is 25 to 27 inches.
 

  The challenging part is, the timing of the storms.
Too much precipitation at one time, can cause the water to flow directly back to the bay,
without settling into our aquifers and lakes.

It’s all about runoff, versus percolating back into the soil.

Too much to soon, or long periods of shower activity spread over many days, followed by long dry periods may all cause issues.

All in all, the rain in November and December, have us off to a good start...  we just need a few good
winter rain storms to come our way.

The grapevines like the rain, as much as we do.

The balance of nature it creates,
is what makes for a "successful vintage.”

Vanilla Bean Custard
 
 
Serves 8
Ingredients
 
Instructions
Heat oven to 325 degrees.
Butter 8 ramekins or a 1 quart baking dish. Set a shallow pan large enough to hold the ramekins or dish in the oven and fill with 1 inch of hot water.
Whisk the yolks together. Stir in the sugar and salt.
Slowly whisk in the hot milk and cream mixture until completely combined.
Add the Vanilla Bean Extract 'Crush'/ vanilla extract.
Pour into the ramekins or dish and sprinkle with nutmeg if desired.
Put in the pan and bake for about 35 to 40 minutes.
The custard is set if a knife inserted in the center comes out clean.
 
Notes
The following recipes were created with Vanilla Bean Extract 'Crush' to eliminate the time consuming process of finding and scraping vanilla beans, however you may use the Vanilla Bean Extract in all of these recipes.

Our Cheese Classes are the First Friday of the Month,
from 1:00 - 3:00 p.m.  unless otherwise noted.


Complimentary Wine Tasting is included in each class. 
Each participant receives a recipe, and a delicious sample of cheese. 
Artisanal cheeses for tasting before and during class.

 
Our informative and highly interactive classes are taught by the
