Dear Friend,

"We live in a time where each of us will be asked to reach deeper, speak more bravely, and live more from the fierce perspectives of the poetic imagination"
- David Whyte

Looking ahead to the future, make 2020 epic and feed yourself the gift of culinary travel. It puts you close to the bone of a place. Choose from our menu of delicious programs that offer not only beauty and taste, but a drop beneath the surface of it all, right into the palm of a culture, seated under a palm at the table.

Our featured Spring programs, Spain and Sicily ~~ offered at a special price! ~~ have been infused with some enticing changes. Please read about them below to discover these two southern beauties that are sure to delight. I have teamed up with some consciously creative chefs both in Spain and Sicily, epicurean women who embody the spirit of places that have captured my heart. Our program in India is sold out and spring Morocco has only two spots left, so don't wait: programs fill up!

Looking back, 2019 has been a dream. Our trips, 11 in total, were full of wonderful travelers and bon vivants. We had 4 private programs, expanding the possibilities of what we can offer our guests, their families and friends.

To all of you who came this year and before, thank you for adding your special pinch of magic to the pot of this lovely, delicious slow-simmering stew... the stew that has gathered the various experiences like foraged plants and broken them down into the fine alchemy of tastes and memories. For what may I ask, if not this, is the benefit of such far-fetched travel? Sharpen your vision and join us in 2020!

Happy Thanksgiving to you all!

~ PMCA Travel Wisdom ~

Travel wakes us up! There is such a thing as sacred travel. No one leaves the door of one’s home without a question or inquiry. We close one door and open another one; to the unknown, to adventure, to a fresh perspective, to do something for oneself. It’s an investment in YOU.
Experience fills our cup. We can often feel like our cups are half-empty even though we have so much to be grateful for. Travel takes that level and spills it over the rim. We feel our energy and inspiration flowing in a different way. It evolves us, transforms us, rescues us -- thank goodness -- from the mundane.
With a fresh perspective on one’s life, we are able to come back and better handle “what is” with perhaps more conviction and strength to live more easily from our “poetic imagination” and see our everyday lives as ordinary magic.

A deep note of friendship, dry sherry, meant to mingle on one's palate with figs and jamón. A carriage ride on the cobblestones and a walk with pigs. Fresh tuna and onions. Flan and Flamenco. The images that come to mind when I recall southern Spain are warm with allegria. Yes, with double "L" since it relates to the gypsy spirit, magic and joy...

Some people say Spain doesn’t conjure up the same allure of Italy; I think it’s because it’s been less explored. Andalucia is a beautiful landscape with storybook villages and historic cities with a taste of classic experiences and flavors. Rediscovered by the youth, these gems tickle a fascination with history, dramatic and significant with flair!

Join us in Andalucia and become an insider. Private flamenco, out-of-the-ordinary access to sherry and jamón Iberico artisans who give us private tastings and cook for us.

Chef Gioconda Scott with pomegranates.

Come and cook with chef Gioconda Scott in her home, Trasierra, a restored 16th-century villa outside of Seville, full of her extended family. Gioconda spent 7 years in Uruguay cooking with firemaster, Francis Mallman and has her own TV show called Paradise Kitchen. Invitation-only access into her kitchen as well as Chefs Isabel’s at the Hacienda and Annie’s in Vejer. Meet village purveyors to forage for our lunch that we will cook together. Feel at home in the Spanish countryside. Ride bikes along flat terrain... or on horseback through wildflowers. Breathe the fresh air. It’s all designed for you to drop in as a guest, and be welcomed as a friend. Enjoy your most memorable time in southern Spain, looking from the inside out.

Join us next April 18-25, 2020. Live the Hacienda life for a few days, basking in the sunshine and kindness of the locals, including our incomparable host Anthony Reid Mora Figueroa.

2020 will be my 22nd year going to the Anna Tasca Lanza Cooking School at Case Vecchie, on the wine estate of Regaleali of the noble Tasca d'Almerita family. Sicily is a place that I long to return to. She is the Pearl of the Mediterranean: no other island captures her charm in the same way. She’s exotic. Fertile. Rich in Arabic and Greek influence and the sustaining life of the olive, citrus and the vine that has given her the identity of a goddess. She is independent, strong and unforgiving. She has suffered hardships and come out looking even more beautiful.

Anna's daughter, Fabrizia Lanza, has taken the foundation of the school and created Cook the Farm, a three-month immersion into the depth of sustainable food. We are there to experience that program's mini version for three days. I have always appreciated the trip to Fillipo’s farm to witness the making of pecorino and see the life of a shepherd. I love walking the dirt roads of Regaleali passing fields of cattaratto, insolia, and other native grapes, then tasting the award-winning wines with our meals of local vegetables, homemade tomato sauces, pastas and semolina breads.

As if this is not enough, Tasca d'Almerita has just been awarded the "2019 European Winery of the Year" by Wine Enthusiast for their commitment to quality and sustainability. Come and enjoy a wine tasting overlooking a thousand acres of vines in the heartland of Sicily and you will understand our resonance with this esteemed estate.

Chef Linda Sarris frolicking with lambs.

We’ll walk the streets of Palermo with my friend, chef and local transplant Linda Sarris, known as "The Cheeky Chef". Her passion took her into the belly of the Ballarò market, where she lives and breathes fresh artichokes and giant purple cauliflowers. We’ll steal Linda and take her on our road trip to Vittoria to see Ariana Occhipinti, the darling wine producer of Frappato. We’ll visit friends in Modica and make chocolate like the old days. The Baroque will call us to Noto for a taste of Corado Azzenza’s artisan gelato. Ortygia’s peninsula with a look to the sea and the mariners' way, will delight the last few nights.

Join us next May 13-20 in Sicily: A Different Italy. If you've never been to Sicily with us, now is the time to give us a call.
