Since 1923, the meticulous care of the winegrowers working together at La Chablisienne has produced wines whose magnificence is amplified by the passage of time.
Chablis is one of the most renowned wine regions and styles of the world. With the largest production in the region, and control of the majority of Grand Cru and 1er Cru sites, La Chablisienne has long been recognized as the greatest house of Chablis.

Situated approximately halfway between Paris and Beaune in the heart of Burgundy, the winegrowing region of Chablis totals over 20,000 acres of vineyards. The Chablis vineyards are some of the oldest in France; cultivated on both banks of the river Serein, the vines of the appellation encompass seventeen villages. The unique character of the wines originates in the predominantly Kimmeridgian soil where we find sediment composed of large quantities of fossilised oysters called exogyra virgula.

This exceptional soil, which is found in few other places throughout the world, gives the terroir its minerality, finesse, and incomparable crystalline tonality.

Coming from vines that are over 35 years old, La Chablisienne Les Vénérables remains true to Chablis’ iconic style: dry, with intense minerality and acidity, bright fruit, and strong aging potential. Fourteen months on the lees, in tank and barrel.

Old vines (vieilles vignes) produce less fruit, so the wines are more concentrated and flavourful. This classic, steely Chablis features aromas of sweet apple, mineral and citrus. Ideal with grilled white fish, as well as oysters on the half shell.
Just as wine comes in different varietals, oysters feature different species. While wine is greatly influenced by terroir (the natural environment that it is produced in), oysters are influenced by merroir (the local conditions in which seafood is raised). Both wine and oysters are beloved for showcasing classic tastes and flavors on their own, and paired together.
