Dear Listeners,
Join us for the conclusion of ONNY’s 2021-2022 concert season as we present this year’s exciting summer Pops/July 4th concert, Adventures in Space!
The program offers a wonderful opportunity for you and other listeners and their families to celebrate America and our freedom as we pay homage to active-duty military and veterans as we thank them with a performance of the Armed Forces Salute. Other patriotic favorites include America the Beautiful, the Stars and Stripes Forever, Fanfare for Democracy as well as the heroic and stirring sounds of Jean Sibelius’ Finlandia.
Those of you who have attended past summer concerts will remember that, in addition to our patriotic favorites, I always choose music with an additional theme. This year we are commemorating America’s long-standing fascination with space with music from television, the movies, and from the classics. Featured will be selections from: 2001: A Space Odyssey; Star Wars: The Empire Strikes Back and the The Mandalorian; Star Trek; Apollo 13 and one of the most popular classics, “Jupiter,” from The Planets by Gustav Holst.
The following performances will be held outdoors: Thursday, June 30 at 8 pm in Thompson Park (Watertown); Friday, July 1 at 7 pm at Paul Smith's College; and Saturday, July 2 at 7 pm in Thousand Island Park (Wellesley Island). The final concert will be performed on Sunday, July 3 at 7:30 pm in Helen Hosmer Hall at the Crane School of Music, SUNY Potsdam.
Have a wonderful summer and THANK YOU for your support during our 2021-2022 season. We look forward to seeing you at one of these July 4th celebrations.

Homeless Musicians Seek Host Families
As you may know, out-of-town musicians who perform with ONNY usually stay with host families who provide a clean bed, shower, and a few meals between rehearsals and performances of a concert. This arrangement saves ONNY literally thousands of dollars for lodging.
This summer Pops concert includes twelve musicians in need of such North Country hospitality.
If you are interested in hosting one or two musicians from Wednesday, June 29 to Monday morning, July 4, please contact Executive Director Kathy Del Guidice at executivedirector@onny.org or 315-212-3440 at your earliest convenience. Host families are issued up to four complimentary tickets for the concert in Hosmer Hall on Sunday, July 3 at 7:30 pm valued at $27/ticket.

A Recipe from ONNY’s First Edition Cookbook
During the pandemic, the Watertown Advisory Committee published its first online cookbook. In this newsletter and future ones, ONNY will feature a recipe contributed by donors, friends, and musicians of the Orchestra.
To begin our series, we’ve chosen a mouth-watering recipe submitted by Gretchen P. Koehler, a core member of ONNY’s Violin II section. A renowned fiddler and member of the North American Fiddlers Hall of Fame, Gretchen also plays throughout the region with Barb Heller, Daniel Kelly, and others.
Flourless Chocolate Cake
This is the #1 "birthday request cake" for my gluten-free and dairy-free household. When cool, the meringue dips in the center, creating a perfect bowl for berries, edible flowers, and chocolate coffee glaze.

Violin II
Ingredients
3 tbsp. non-dairy margarine or unsalted butter, plus more for pan
6 oz. bittersweet chocolate, chopped (9 oz. total)
6 large eggs, separated and at room temperature
1 cup granulated sugar
3 tbsp. instant coffee or espresso powder
1/4 tsp. coarse salt
1 tbsp. vanilla extract
For the Glaze
3 oz. bittersweet chocolate, chopped
1 1/2 tbsp. non-dairy margarine/ or unsalted butter
2 tsp. vanilla extract
1/3 cup unsweetened soy milk (or any non-dairy milk)/ or heavy cream
1/3 cup granulated sugar
1 tbsp. instant coffee or espresso powder
1/4 tsp. coarse salt
Instructions
Preheat oven to 350°.
Make the cake (allow for cooling time)
Butter bottom of a 9” spring form pan, and line with parchment cut to fit. Melt butter and chocolate in heat-proof bowl set over a pan of simmering water. Beat egg yolks with a half cup of sugar, until thick and pale, about 3 minutes. Add espresso and salt, beat for 1 minute. Add vanilla and chocolate mixture, beat 1 minute. In clean bowl, beat egg whites until foamy. Slowly add half cup sugar, beating until stiff peaks form. Fold whites into chocolate mixture in three additions. Pour batter into prepared pan.
Bake until set, 40–45 minutes, cooling completely in pan on a rack. Remove pan sides.
Make the glaze (to be served warm)
Place chocolate, butter and vanilla in a bowl. Bring remaining ingredients to a
boil, stirring, and pour over chocolate mixture. Whisk until smooth. Serve glaze
warm with cake.
Yields: 8 servings.
