“IPAs are so hot right now!” That sentence is so 1996. And 2019. And probably 2030, if we make it that far. As long as craft beer has been a thing, IPAs have dominated, bringing drinkers in flocks to their favorite beer bars, turning naysayers into beer snobs, and sending rabid collectors across state lines.

That makes picking the best IPAs quite a task, especially in the summer: The best at any given time can be mainstays, one-offs, and everything in between. To keep our bead on this ever-moving target, we’ve assembled beer experts to name what they deem to be the most attention-worthy IPAs at this very moment. We will revisit the list in the months to come to add new beers and subtract the ones lost to time, so that you always have your finger on the proverbial IPA pulse. Raise a glass. It’s a good time to be an IPA lover. It always is. READ MORE

2009 Chateau De Chasseloir Muscadet Sèvre Et Maine Sur Lie. $10.99. Available at Joe Canal, Brick.

This is our favorite wine for oysters and other shellfish.

Muscadet Sèvre et Maine Sur Lie refers to a dry white wine from France’s Loire Valley, produced from the Melon de Bourgogne, grape, sometimes mistakenly referred to as the Muscadet grape.

There are three districts that can produce Muscadet Sur Lie (aged on its lees), with Muscadet Sèvre et Maine being the largest and most famous. It is situated southeast of Nantes and is named for two local rivers, the Sèvre Nantaise and the Petite Maine. The soils here are quite rocky, with deposits of quartz and granite.

The typical Muscadet Sèvre et Maine Sur Lie is medium-bodied with a green/straw color with gold reflections. Most are not aged in wood, but have notable texture, thank to the sur lie aging. Acidity is quite good in most years, and because of the soil composition, there is a distinct minerality to theses wines. While they are immediately accessible upon release, most examples drink well for 5-7 years.

The classic pairing for Muscadet Sèvre et Maine Sur Lie is shellfish, especially oysters. It also works well with seafood salad, crab or goat cheese – the tangier, the better!

My potato salad reined in my family until I married my wife. My recipe came from my grandmother down through my mother. 6 baking potatoes cooked until tender and cubed, mixed with 3 chopped hard boiled eggs, salt, pepper, 3 tbl minced onion and 2 cups mayo. No reason to look anywhere else. Then came Jen. Her's is made with 6 cups Eastern White Potatoes, 2 tbl grated onion, 2 tbl minced parsley, 2 tsp salt, 1/2 tsp paprika, mayo and here's the kicker French Dressing. (1/4 tsp dry mustard, 1/8 tsp ground pepper, 3/4 tsp salt, 1/4 cup white vinegar, 1/2 tsp paprika, 1 tsp sugar, 3/4 up salad oil.)

Sadly, when the family (grandkids included) ask for potato is hers they ask for. Not much of a war....
