Evolve Our Prison Farms is campaigning against the government’s plan to establish dairy operations at Joyceville Institution with 1,500 goats and 60 cows. Milk will be sold to the Feihe infant formula factory where it will be processed and shipped to China. The government is calling this “emphasizing rehabilitation” through “animal therapy.” Join the Postcard Campaign calling for a truly therapeutic and rehabilitative model that upholds prisoner justice, animal justice, and environmental justice. Postcards can be picked up at Lush Cosmetics, Novel Idea, and the Mutt Hutt, which you can sign and send postage-free to the House of Commons. Check out Evolve's new Website!

Keeping Up With Chef Cecile - Cecile's Untamed Kitchen

Come and meet Cecile for her "Tasting & Recipe Sharing" at
Memorial Centre Farmers Market
on July 15th from 10 to 12

Chef Cecile is also sharing a delicious and nutritious recipe with us this month!

Buckwheat “Crêpes”
vegan & gluten-free 1 cup buckwheat flour
+/- 1 cup cold water
1/2 tsp sea salt
1 tbsp oil or vegan butter melted

In a medium size bowl, measure the flour and sea salt. Gradually whisk in the water. Keep on mixing for a while as it helps incorporating air to the batter. Remember, there is no gluten or eggs in this recipe. An electrical beater comes handy. Or a blender. Let your batter sit at least 4 hours in the fridge. Overnight is ideal. Using a good non-stick pan, oil it lightly. The 1st crêpe is always the “sacrificial” one. After this test, you can adjust the heat and quantity of batter you pour into the pan.
You might have to add some water if the batter is too thick.

TIPS & TRICKS... Make smaller crêpes as they will be easier to flip.
I love to use coconut oil to cook my crêpes. In the picture, it’s tahini + wild blueberry jam + maple syrup = Yum!
