Honk honk.
Hey hey // honk honk, as the geese say.

I might dare to say that spring is within sight. Sure, it was 18 degrees last night. And sure, there's still a foot of snow hanging around. But I put away the snow shovel this weekend, and I trimmed back my winter beard. Which is all to say, I hope spring is coming soon, or else my face is going to be quite cold.

The geese have been loud, skeins filling the sky with unintelligible and apparently unintelligent honking as they hurry north toward undoubtedly colder weather than we have here. But good for them, chasing their dream. Buds are beginning to appear on the trees and the arcing path of the sun has been rising higher and higher above our heads.

Even if the geese and me are jumping the gun a bit, spring is definitely on its way. And then?

We've now got a shelfful of syrup, even after giving much away, so have been looking for things to do with it. We had pancakes a couple of times, we put it in coffee, we use it in sauces. Yesterday we tried a basic maple muffin recipe when I was overcome by a craving for sweets. The recipe is super easy and not super sweet, though you can always drizzle more maple syrup over top of your muffin...

Here's the recipe: Basic Maple Muffins

And here's a photo of them with that homemade syrup I can't stop drinking:
What else? Not a lot this week. We have a new solar panel on its way so we can expand our capture capacity. We'll write about that new setup next week.

Here's what we're reading:
Anyway, same as always, get in touch!

Just take a minute to remember what summer is like...
