DECIDING TO COMPETE?
Hopefully, during all this quarantine, you’ve been grilling and smoking up some masterpieces and wondered if they would hold up to a stage call in the competition world. Competing in a food competition is a love/hate relationship. I promise you it is an amazing rush to get a first-place finish in a highly recognized competition of any kind.  There is an enormous sense of accomplishment and satisfaction to finally get rewarded for all the hard work.
However, there are usually lots of drained emotions and frustrations before you get the validation that you’ve been looking for. Many folks that have scored large wins have gone on to create successful businesses in the BBQ world. Then there are folks that have balanced wins with losses but make the entire competition experience FUN.  They have truly discovered the real winning formula and reason to compete.  There are many times when you will be so frustrated and angry. You’ll come up with every excuse why someone else is winning all the time.   Just know that sooner or later even the big boys in BBQ fall. They say competing in the KCBS events can make a grown man kneel with humility. This is true, I know it firsthand.

Signing up for seminars and watching YouTube is all super helpful, but again, the most important thing you can do is practice at home before you pull the trigger to compete.  Another piece of advice is to start with a small local event in your hometown. If there is not one in your home town, you could organize one. Not long ago, an individual started a Burger contest in Memphis, TN in a small parking lot.  This soon grew to a parking lot outside a football stadium.  After just a few years this event grew to where the winner earns a Golden Ticket to compete in the World Food Championship, which is an international food event with many different cooking and grilling categories.
There are many popup events that are gaining popularity around the country such as grilled cheese, sausage, pasta, Italian gravy (sauce), a breakfast competition, and a Crawfish festival/completion. I think almost every city has a hot wing competition. Well, you get the picture.  There are endless possibilities. The important thing is to remember these are enormously fun and competitive. Just start cooking in your back yard and enter a small event to get your feet wet. I’m starting a series of articles on the do’s and don’ts of competition and will share some amazing tips, so stay tuned.

THE PORKOSAURUS STORY
No one would have guessed that in 1994, a group of FedEx co-workers would come together to create a BBQ team that would grow into a family. Ultimately becoming an award-winning company (OVER 25 YEARS & MOST RECORD MEMPHIS IN MAY WINS) whose owners are as diverse as our flavor is unique.

Porkosaurus began with only a handful of members who equally enjoyed barbecue and camaraderie. After many backyard barbecues with family and friends, we decided to throw our hats into the competitive barbecue ring. Our newly created team quickly learned that cooking in the backyard was vastly different from the competitive barbeque. *Who knew? Determined to master the competitive circuit, our hodgepodge group confidently cooked, pigged out, reflected, learned and repeated. 
 
We even analyzed our competitors by devouring all the bbq we could get our claws on. (For Science...) Through these other competitors, we learned the secrets of low and slow cooking.
 
Over time our enthusiasm inspired both friends and more co-workers to join our team. What started as a local team in Memphis and grew nationally and internally.
